Hungarian Goulash Recipe ( As interpreted by an Englishman !)
Ingredients
500g cubed braising steak
1 green pepper
1 large or 2 samll onions
3 garlic cloves
1/2 tsp of HOT Hungarian paprika powder
1/2 tsp of Spanish Smoked Paprika
1/2 tsp ground cumin
1/2 tsp caraway seeds
2 table spoons of plain flour with a pinch of salt and pepper added and stirred in a bowl
small glass of basic red wine
1 beef stock cube
chopped sprig of parsley if available
2 carrots, peeled and sliced
200g of mushrooms stalks chopped off and halved
olive oil
10og of butter
tablespoon of tomato puree
1 1/2 pint of water
To serve
Mashed potatoes and soured cream
Method
1. Stir chopped onions in oil and butter on low heat for a few minutes
2. Stir cubed braising steak in seasoned flour.
3. Add to onions and stir for a few minutes adding garlic
4. Add all spicess and stir for 2 minutes
5. Add water, wine, tomato puree and stock cube. Bring to boil stirring constantly.
6. Add carrot, any more herbs ( parsley, thyme or herbs de provence )
7. Put in oven at gas amrk 6 for 3 hours
8 served with mash potato with a dollop of soured cream.
Serves 4
